How to get Epona in Zelda Tears of the Kingdom

Link's faithful steed, Eponamay well appear in Zelda Tears of the Kingdom. Unfortunately, unlike the exclusive equipment from Breath of the Wild which is now directly available in TOTK without amiibo, this is not yet the case for Epona.
